Why do we use the word stock car to describe the car that Nascar races?

I understand that there are no interchangable parts between an Impala SS that I can buy off of a GM dealership and the Impala SS that is used in Nascar racing except the name.
I don’t get it! The one at the dealership is by the way stock!
